Stable Coinsare cryptocurrencies that are linked to certain reference values, such as fiat currencies (euro, USD, etc.), precious metals, commodities or similar. They correspond to a certain amount of these "stable" reference values and are therefore among the less volatile assets. Issuers of stable coins are usually private organisations.
